Hearty Stew

Bring warmth to your table with this hearty stew that’s perfect for chilly evenings or when you need some comfort food.
Ingredients:

  • 2 cups chopped potatoes
  • 1 cup sliced carrots
  • 1 cup diced onions
  • 2 cloves garlic minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans drained
  • 1 tsp paprika
  • Salt & pepper to taste
    Instructions:
  1. In a large pot over medium heat sauté onions until translucent.
  2. Add garlic then stir in potatoes & carrots cooking for another few minutes.
  3. Pour in vegetable broth & add diced tomatoes; bring it all up-to boil then simmer covered until veggies tender (~20mins).
    4.Add kidney beans,paprika,salt,& pepper stirring well before further simmering uncovered till slightly thickened(~10mins). Serve hot!
