Bring warmth to your table with this hearty stew that’s perfect for chilly evenings or when you need some comfort food.
Ingredients:
- 2 cups chopped potatoes
- 1 cup sliced carrots
- 1 cup diced onions
- 2 cloves garlic minced
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) kidney beans drained
- 1 tsp paprika
- Salt & pepper to taste
Instructions:
- In a large pot over medium heat sauté onions until translucent.
- Add garlic then stir in potatoes & carrots cooking for another few minutes.
- Pour in vegetable broth & add diced tomatoes; bring it all up-to boil then simmer covered until veggies tender (~20mins).
4.Add kidney beans,paprika,salt,& pepper stirring well before further simmering uncovered till slightly thickened(~10mins). Serve hot!
