Spinach and Ricotta Stuffed Square Pasta

Ingredients:

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 cup ricotta cheese
  • 1 cup frozen spinach, thawed and drained
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup marinara sauce
  • Grated Parmesan cheese for garnish
  • Fresh basil leaves for garnish

Directions:

  1. Prepare the Pasta Dough:
  • On a clean kitchen counter, create a mound with the flour and make a well in the center.
  • Crack the eggs into the well and add the salt.
  • Using a fork, slowly incorporate the flour into the eggs until a dough forms.
  • Knead the dough for about 5 minutes, then cover with plastic wrap and let it rest for 30 minutes.
  1. Make the Filling:
  • In a bowl, combine the ricotta cheese, thawed and drained spinach, Parmesan cheese, basil, parsley, black pepper, and nutmeg. Mix well and set aside.
  1. Roll and Cut the Pasta:
  • Divide the rested dough into four equal parts.
  • Working with one part at a time, roll the dough out into a thin sheet. Ensure that the sheet can cover the entire surface of the stuffing.
  1. Stuff and Form the Pasta:
  • Place tablespoon-sized dollops of the ricotta mixture about an inch apart on half of the pasta sheet.
  • Fold the other half of the pasta sheet over the filling to form a large rectangle.
  • Press down firmly around each mound of filling to remove air pockets and seal the edges.
  1. Cut the Pasta:
  • Using a knife or a pasta cutter, trim the edges to create a neat square shape and then cut between the mounds of filling to create individual ravioli.
  1. Cook the Pasta:
  • Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes or until they float to the surface.
  • Remove the ravioli using a slotted spoon and drain any excess water.
  1. Serve:
  • Warm the marinara sauce in a skillet.
  • Gently toss the cooked ravioli in the marinara sauce.
  • Serve the stuffed pasta on a plate, garnished with grated Parmesan cheese and fresh basil leaves.
