Ingredients:

  • 1 cup white rice
  • 1 block firm tofu, drained and cubed
  • 1 cup purple cabbage, shredded
  • 1 red bell pepper, thinly sliced
  • 1 cup spinach, steamed
  • 1 cup shiitake mushrooms, sliced
  • 1/2 cup pickled radishes
  • 4 tbsp gochujang sauce
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp agave nectar
  • Salt, to taste
  • Pepper, to taste
  • Cooking oil

Instructions:

  1. Cook the white rice according to package instructions and set aside.
  2. In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, and agave nectar to create a marinade for the tofu.
  3. Marinate the tofu cubes in the sauce for 15 minutes.
  4. Heat a pan over medium heat and add a little cooking oil. Add the marinated tofu and cook until crispy and golden on all sides. Remove from the pan and set aside.
  5. In the same pan, add a little more oil if needed, then sauté the shiitake mushrooms until they are tender and coated in the glaze.
