Ingredients:

  • 500g bread flour
  • 350g water
  • 100g active sourdough starter
  • 10g salt

Directions:

  1. In a large mixing bowl, combine the bread flour and water. Mix until it forms a shaggy dough. Cover with a cloth and let rest for 30 minutes to an hour.
  2. Add the active sourdough starter to the dough and mix until well incorporated. Cover and let rest for another 30 minutes.
  3. Sprinkle the salt over the dough and knead it in until fully combined. Let the dough bulk ferment at room temperature for about 4 hours, folding it every 30 minutes for the first 2 hours.
  4. After bulk fermentation, shape the dough into a round boule. Place it in a floured proofing basket, seam side up. Cover and let it rise at room temperature for 1-2 hours, or until it passes the poke test.
  5. Preheat your oven to 450°F (230°C) with a lidded Dutch oven inside.
  6. Once the dough has risen, carefully invert it onto a piece of parchment paper. Score the top of the loaf with deep, artistic cuts using a sharp knife or bread lame.
  7. Carefully transfer the dough and parchment paper into the preheated Dutch oven. Cover with the lid and bake for 20 minutes.
