Spicy Shrimp Gumbo with Freshly Baked Cornbread

Ingredients:

  • 1 pound of large shrimp, peeled and deveined
  • 1 tablespoon of vegetable oil
  • 1 cup of diced onion
  • 1 cup of diced green bell pepper
  • 1 cup of diced celery
  • 3 cloves of garlic, minced
  • 1 can (14.5 ounces) of diced tomatoes
  • 4 cups of chicken or seafood broth
  • 1 cup of okra, sliced
  • 2 bay leaves
  • 1 teaspoon of dried thyme
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Red chili flakes for garnish
  • Chopped fresh parsley for garnish

For the Cornbread:

  • 1 cup of cornmeal
  • 1 cup of all-purpose flour
  • 1/4 cup of sugar
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 1 cup of buttermilk
  • 1/3 cup of vegetable oil
  • 2 eggs

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and celery. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.

  2. Add the minced garlic and cook for another 1-2 minutes.

  3. Stir in the diced tomatoes, chicken or seafood broth, bay leaves, thyme, smoked paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.

  4. Meanwhile, prepare the cornbread. Preheat the oven to 400°F (200°C). Grease a 9-inch square baking pan.

  5. In a mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.

  6. In another bowl, whisk together the buttermilk, vegetable oil, and eggs.

  7. Pour the wet ingredients into the dry ingredients and stir until just combined. Pour the batter into the prepared pan and bake for 20-25 minutes, or until golden brown.

  8. Once the gumbo base has simmered, add the sliced okra and shrimp. Cook for about 3-4 minutes, until the shrimp turn pink and opaque.

  9. Remove the bay leaves from the gumbo and discard.

  10. Ladle the spicy shrimp gumbo into bowls. Sprinkle red chili flakes and chopped parsley on top for garnish.

  11. Serve the gumbo alongside slices of freshly baked cornbread.
