  • 2 tbsp corn syrup

  • 1/2 cup fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 tsp lemon juice
  • 1 tbsp raspberry liqueur (optional)
  • Edible gold leaf (for garnish)

Instructions

  1. Prepare the Choux Pastry:
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • In a saucepan, combine the butter and water. Bring to a boil. Add the flour and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat and let cool slightly.

  • Once the éclairs have cooled, use a small knife to make a lengthwise slit in each éclair, being careful not to cut all the way through. Transfer the custard to a piping bag fitted with a long, narrow tip. Fill each éclair with the vanilla bean custard.

  • In a heatproof bowl, combine the chopped chocolate, heavy cream, and corn syrup. Microwave in 20-second intervals, stirring in between, until the chocolate is melted and the mixture is smooth. Let the glaze cool for a few minutes.
