Savory Tomato and Basil Puff Pastry Tart

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 1 cup shredded Gruyere cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1/2 cup cherry tomatoes, thinly sliced
  • Fresh basil leaves
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheet on a lightly floured surface into a rectangular shape.
  3. Place the rolled-out pastry onto a baking sheet lined with parchment paper.
  4. Using a sharp knife, score a border about 1 inch from the edge of the pastry, being careful not to cut all the way through.
  5. Prick the inside of the border with a fork to prevent it from puffing up too much during baking.
  6. Bake the pastry in the preheated oven for 12-15 minutes or until it is puffed and golden brown.
  7. While the pastry is baking, heat the olive oil in a skillet over medium heat.
  8. Add the sliced cherry tomatoes and sauté for 2-3 minutes until slightly softened.
  9. Once the puff pastry is golden brown, remove it from the oven.
  10. Inside the border of the pastry, evenly sprinkle the shredded Gruyere and sharp Cheddar cheese.
  11. Arrange the sautéed cherry tomatoes on top of the cheese.
  12. Return the tart to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  13. Remove the tart from the oven and let it cool for a few minutes.
  14. Garnish with fresh basil leaves, season with salt and pepper to taste.
  15. Slice the tart into squares and serve warm.
